Eat well. Live simply. Laugh often.
As with everything else this year, the 4th of July and all that goes with it will be different than in the past. No parades, fireworks or large family BBQ’s. Every family will need to decide for themselves what will make that day memorable. Here are some red, white and blue baked offerings with strawberries, blueberries and cream!
Take advantage of nature’s bounty and make these wonderful Strawberry Drop Biscuits for your 4th of July breakfast! Add scrambled eggs and you’ll have a yummy meal. Feel free to adjust the recipe with gluten free flour, coconut sugar and no icing. This biscuit works well with blueberries too! These biscuits are moist enough to take along on a picnic or hike. Try making Strawberry Spoon Cake...it’s like a French fruit cake called clafouti…adjust the sugar to your own taste.
Make this amazing Blueberry Cobbler as a dessert on the 4th of July…don’t forget the cream or ice cream for a delicious dessert! There will be no leftovers! The recipe comes from Chez Panisse in Berkeley which is well known for using the freshest local farm sourced foods. I have just started growing my own blueberries and it is such a treat to harvest them fresh each morning!
If you find yourself with a bounty of fruit this summer, I’d like to recommend a new book on preserving, baking and cooking with fruit. It Starts With Fruit by Jordan Champagne is by far the best book for fruit related cooking at home. Jordan taught in the California Coast LifeWays Training for many years and inspired us to go home and make jams, cobblers and syrups on our own.
